Trader Joe’s Tempeh Tacos

An Easy, Cheap, Delicious Meal in 20 Minutes

We wanted to share quickly a meal we did last night that turned out to be incredibly tasty. We did taco night, but instead of meat (of course), we bought some Trader Joe’s tempeh and sautéed it. The TJ’s tempeh is cheap and one packet feeds about two people.  The tempeh itself is very high in protein and is an extremely healthy alternative to meat.  The texture is grainier than tofu, which we also like.

To start, slice the tempeh block into cubes.  Then marinate in a sauce of your preference for as long as you want – we did about 15 minutes and chose a spicy Mexican marinade.  It’s that easy!  The marinade we chose is on the site Happy. Healthy. Life. (ingredients below).  We didn’t have all the ingredients, but made do with what he had in the cabinet and experimented a bit to taste.

Once you’re done marinating the tempeh cubes, sauté the cubes in a pan at medium heat until they brown and all the sauce has absorbed into the tempeh – shouldn’t take more than 10 minutes.

Then enjoy!  For our tacos Cindy used lettuce wraps and I used corn tortillas.  We also heated up a can of refried beans, squashed some avocado for guacamole, added some tomatillo sauce, and Cindy even cut up some dates to sweeten her wraps.  Our tempeh turned out to be really spicy (lots of red pepper), so the sweetness of the dates complimented it nicely.

In all, it took about 20 minutes, cost about $10, and was totally tasty.  The tempeh really has a great texture and you can marinade it in whatever kind of sauce you want.

Next time I think we are going to try marinating it in a peanut sauce and add it to a stir fry or something.  

 Spiced Mexican Tempeh
1 package tempeh 8oz, cut into cubes
2-3 Tbsp olive oil
2 tsp maple or agave syrup
1 tsp liquid smoke
1/4 tsp cumin powder
1/2 tsp garlic powder
1/2 tsp spicy chipotle powder
1/4 tsp salt
1/4 tsp pepper
1/2 orange, juiced
1 Tbsp apple cider vinegar
